Red Lentil Soup (Slow Cooker)
250 g red lentils
2 tbsp olive oil
1 medium onion, finely chopped
2 celery stalks, finely chopped
1 tsp ground cumin
1 tsp turmeric
1 tsp ground coriander
2 tbsp fresh lemon juice
1.5 liters vegetable or chicken broth
Salt and pepper to taste
Sauté the onion and celery in olive oil until softened.
Add everything to the slow cooker.
Cook on high for 1 hour, then reduce to low and cook for an additional 6 hours.
Blend the soup using a blender or immersion blender until smooth.
