Vegetable patties

Vegetable patties are a fun alternative to meat. These zucchini patties have a mild flavor with a hint of citrus.

1 medium zucchini

100 ml sweet corn

2 boiled potatoes

2 spring onions, sliced

1/4 tsp garlic powder

1 tbsp flour

Salt and pepper

A little oil

Sauce:

100 g sour cream

1 garlic clove, grated

Zest of 1 lemon

1 tbsp lemon juice

Salt and pepper

Grate the zucchini and sprinkle a little salt over it. Let it sit for 15 minutes, then squeeze out the excess liquid.

Peel the potatoes and grate them into the zucchini. Add the corn, sliced spring onions, and grated garlic. Mix well, then sprinkle the flour over the mixture. Season with salt and pepper.

With oiled hands, form the mixture into patties and place them on baking paper.

Bake in a preheated air fryer at 180°C (360°F) for 8 minutes. Flip the patties and fry for another 6 minutes.

Serve with the sauce.
