Vanilla Ice cream Cupcakes
12 flat-bottomed ice cream cones
170 g soft butter
170 g sugar
3 eggs
170 g flour
1-2 tsp vanilla extract
Cream together the butter and sugar, then add the eggs.
Stir in the flour and vanilla extract. Place the ice cream cones in a cupcake pan and fill each cone 3/4 full with the batter.
Bake at 180°C for 20 minutes or until a skewer inserted into the center comes out clean.
Let the cakes cool completely before decorating with vanilla buttercream.
Vanilla Buttercream:
150 g butter
450 g powdered sugar
1 tsp vanilla extract
Milk as needed (add very little at a time)
