"Toum" Garlic Sauce
4 cloves of garlic
60 ml vegetable oil
A small pinch of salt
1-2 tbsp lemon juice
Mash the garlic with the salt, then gradually add the oil while mixing.
You can use a mini chopper or an immersion blender. It’s easiest to pour the oil in a thin stream while blending.
When about a quarter of the oil has been added, squeeze in a little lemon juice and continue mixing with the oil.
Alternate adding lemon juice and oil until all the lemon juice and oil are incorporated. The sauce should thicken slightly as you blend.
Store in the refrigerator for 1-2 weeks.
