Tofu Stuffed Peppers
Ingredients:
4 red bell peppers
150 g sun-dried tomatoes
150 g artichoke hearts
150 g almonds, dry roasted
150 g tofu
100 g mozzarella
4 tbsp feta cheese in oil
Salt and cayenne pepper
A little chives
Instructions:
Blend all the ingredients, except for the bell peppers and mozzarella, in a food processor until smooth.
Stir the mozzarella into the mixture with a spoon.
Slice each bell pepper in half and remove the seeds.
Fill each pepper half with the mixture and place them in an oven dish.
Bake at 200°C for 30 minutes.
