Sweet potato lentil soup

300 g sweet potato, peeled and chopped

3 medium carrots, chopped

1/2 bunch spring onions, chopped (white part only)

75 g dried red lentils

5 cm piece of ginger, finely grated

3/4 tsp curry powder

1 tsp Maldon salt

2 vegetable stock cubes

2 garlic cloves, finely chopped

6 cups water

Place all the ingredients in a pot and bring to a boil.

Reduce the heat and let it simmer gently for 30 minutes.

Blend the soup with a hand blender until silky smooth.
