Sweet Potato Pie
1 kg sweet potatoes
Salt
3 tbsp olive oil
2 tbsp maple syrup
2 tsp finely grated fresh ginger
1/2 tsp cumin
1/4 tsp cinnamon
Freshly ground pepper
40 g pecans
Peel and cut the sweet potatoes into chunks. Boil them in lightly salted water until tender.
Mash the sweet potatoes and mix in the olive oil, maple syrup, ginger, cumin, cinnamon, and pepper.
Place the sweet potato mixture into a baking dish and sprinkle (or arrange) the pecans on top.
Bake at 200°C for about 20 minutes.
