Sweet Potato Jacket Potatoes

Ingredients:

4 sweet potatoes (600 g)

1 large onion

2 garlic cloves, crushed

1 red Romano pepper

2 green fresh jalapeños

2 tsp cumin

1/2 tsp cinnamon

2 tsp oregano

1 tbsp tomato paste

1 can diced tomatoes

250 ml vegetable broth

1 can kidney beans

Instructions:

Prick the sweet potatoes with a fork and bake at 200°C for 45 minutes.

Sauté the pepper, onion, garlic, and half of the jalapeño along with the spices in a bit of oil until the vegetables are soft.

Add the tomato paste and vegetable broth, and let it simmer on low heat for 25 minutes.

Add the beans and heat for another 5 minutes.

Cut the sweet potatoes in half, top them with the bean mixture, and garnish with some avocado (and optionally sour cream) and the remaining jalapeño.

Serve with a side salad.
