Sushi Rice

500 g rice, rinsed thoroughly

660 ml water

Bring to a boil and simmer on low heat for 10 minutes with the lid on.

Turn off the heat and let it sit with the lid on for an additional 15-20 minutes.

A rice cooker can also be used; in that case, rinse the rice and then add 500 ml of water to the pot along with the rice.

Transfer the rice to a large dish (e.g., a baking dish) and spread it out to cool.

While the rice is still hot, pour the following vinegar mixture over the rice:

3 tbsp rice vinegar

1 tbsp mirin (rice wine)

3 tsp sugar

1 tsp salt

Once the rice has cooled completely, you can start assembling sushi with your favorite filling.
