Sugarfree Carrotcake

2 eggs

1 grated apple

200 g grated carrots

30 g light mayonnaise

2 tsp cinnamon

2 tsp cocoa powder

2 tsp baking powder

1 tsp vanilla extract

1-2 tsp liquid sweetener

50 g flour

50 g skim milk powder

Instructions:

Peel and grate the apple and carrots. Mix everything together well. The skim milk powder may take a bit of time and patience to combine fully with the rest of the ingredients.

Bake at 190°C for 1 hour.

Frosting:

200-300 g Greek yogurt

A dash of vanilla extract

Sweeten to taste with liquid sweetener

Mix the frosting ingredients together and adjust sweetness as desired.
