String Beans with Caramelized Red Onion
String Beans
1 red onion
1 tbsp oil
2 tsp balsamic vinegar
1 tbsp brown sugar
water as needed
Trim the string beans (cut off both ends) and boil in lightly salted water for 3 minutes. Cool the beans in a sieve under running cold water to prevent them from getting too soft.
Cut the onion in half and then into thin slices. Heat oil in a pan and soften the onion. Add balsamic vinegar and brown sugar with a little water to the pan. Let it simmer for a moment and then add the beans and heat for 1 minute.
This is great as a side dish with Christmas turkey or chicken.
