Strawberry filled Cookies
100 g sugar (1 dl)
85 g softened butter
1 egg
280 g flour (3.5 dl)
1/4 tsp baking powder
1/4 tsp lemon extract
1/4 tsp vanilla extract
Strawberry jam for filling
Cream together the butter and sugar, then add the egg and beat slightly.
Add the flavor extracts and baking powder, along with the flour.
Knead the dough and let it rest in the refrigerator for 1 hour before rolling it out and cutting out circular cookies with a glass or cookie cutter.
Place strawberry jam in the center of each cookie and fold each cookie in half.
Press the edges together with a fork.
Bake at 180°C for 10-12 minutes or until the cookies begin to take on a bit of color.
