Strawberry Shortbread Cookies
125 g sugar
225 g softened margarine
1 tsp vanilla extract
250 g flour
1 dl finely chopped fresh strawberries
Instructions:
Start by slicing the strawberries and placing them on kitchen paper to absorb excess moisture.
In a mixing bowl, cream together the softened margarine and sugar until light and fluffy.
Add the flour and vanilla extract, then knead the dough well until everything is combined.
Chop the strawberries into small pieces and gently fold them into the dough.
Using a tablespoon, scoop the dough and place it on a parchment-lined baking sheet. Press each dough ball lightly to flatten slightly.
Bake at 180°C for 12-14 minutes or until the edges start to turn golden.
Let the cookies cool on a wire rack before serving.
