Spicy Ratatouille

Once upon a time, a very similar dish could be purchased at Nando's restaurants, but it has been several years since it was removed from the menu. I was a big fan of this version of the dish, so I have tried to recreate it here:

Ingredients:

1 tsp olive oil

2 cloves of garlic, roughly chopped

1 rib of celery, cut into small pieces

1/2 red onion, sliced

1/4 zucchini, sliced

1/2 can of passata

1 tbsp Nando's sauce (or more to taste)

The vegetables are sautéed in the oil, and the tomatoes and sauce are added once the vegetables have started to soften slightly. Allow the dish to simmer on low heat until the vegetables are cooked through. Taste with the Nando's sauce—it is spicy.
