Soft cookies (Tebollur)
450 g all-purpose flour
200 g margarine
200 g brown sugar
100 g grated chocolate
3 eggs
3 teaspoons baking powder
150 ml milk
1/2 teaspoon ground cardamom
Preheat the oven to 200°C.
In a mixing bowl, cream together the margarine and powdered sugar until light and fluffy.
Add the eggs one at a time, mixing well after each addition.
Stir in the milk and mix until combined.
In a separate bowl, whisk together the flour, baking powder, and ground cardamom. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
Fold in the grated chocolate.
Drop spoonfuls of the dough onto a baking tray lined with parchment paper.
Bake for 10-15 minutes, or until the edges are lightly golden.
Allow the cookies to cool on the tray for a few minutes before transferring them to a wire rack to cool completely.
