Soft Pretzels
3.5 dl warm water
1 tbsp sugar
1.5 tsp salt
2.25 tsp dry yeast
10-11 dl flour
60 g melted butter
For boiling:
Half a pot of boiling water
1 tbsp baking soda
For egg wash:
The yolk of one egg
1 tsp water
Coarse salt
Combine the water, salt, sugar, and yeast. Let it sit for a few minutes until the yeast starts to froth.
Add the flour and melted butter, then knead the dough well. Allow the dough to rise in a warm place for 30-40 minutes.
Divide the dough into 8 pieces and roll them into long ropes. Shape each rope into a pretzel:
Add the baking soda to the boiling water and place one pretzel at a time into the pot. Boil the pretzels for half a minute and then remove them from the pot.
Beat the egg yolk with 1 tsp of cold water. Place the boiled pretzels on a baking sheet lined with parchment paper, brush with the egg wash, and sprinkle coarse salt on top.
Bake at 225°C until the pretzels are golden brown.
