Soft Lemon Cookies with Raisins

1 egg

100 g butter

1 dl sugar

1/2 tsp lemon extract

1 1/2 tsp baking powder

3 dl flour

2-4 tbsp raisins

Cream together the butter and sugar until smooth. Add the egg and continue beating for a bit longer.

In a separate bowl, mix the dry ingredients (flour and baking powder) and then fold them into the butter mixture using a spatula.

Once combined, gently mix in the raisins.

Shape the dough into small balls using two tablespoons or your hands, and place them on a baking sheet lined with parchment paper.

Bake at 180°C with a fan setting until the cookies start to turn slightly golden.

Let them cool before serving.
