Snowball Cake
*Kókosbollur are Icelandic marshmallow treats, often covered in chocolate and coconut. Tunnocks Snowballs work too.
4 eggs
125 g sugar
100 g dark chocolate
1 tsp baking powder
2 tbsp flour
Filling:
500 ml (1 pint) double cream
4 coconut marshmallow treats (kókosbollur*) or 8 snowballs
Whisk together the eggs and sugar until light and fluffy. Add the flour and baking powder, then gently fold in the melted chocolate.
Bake in two well-greased cake tins at 200°C (or 175°C if using a convection oven) for about 20 minutes. Let the cakes cool before removing them from the tins.
Slice each coconut marshmallow treat into three pieces. Whip the cream and layer it along with the sliced marshmallow treats between the cake layers.
