Slow Cooker Pulled Pork
Pork shoulder, all visible fat trimmed
1 onion, chopped
1 small beer
Spice Mix:
3 tbsp brown sugar
1 tbsp paprika
1 tbsp garlic powder
1 tbsp Maldon salt (or sea salt)
2 tsp onion powder
2 tsp mustard powder
1 tsp cumin
1 tsp black pepper
For Serving:
Small burger buns
BBQ sauce
Coleslaw (optional)
Cabbage (optional)
Instructions:
In a bowl, combine the brown sugar, paprika, garlic powder, Maldon salt, onion powder, mustard powder, cumin, and black pepper.
Rub the spice mixture all over the pork.
Chop the onion and place it in the bottom of the slow cooker.
Put the seasoned pork on top of the onions and pour the beer over the meat.
Set the slow cooker to low and cook for 10-12 hours.
Once cooked, remove the pork from the slow cooker and shred it using two forks.
Pour 1 dl (about 1/2 cup) of the cooking liquid over the shredded pork along with a generous amount of BBQ sauce. Mix well.
Store the pulled pork in a sealed container in the refrigerator until ready to assemble the sandwiches.
Serve the pulled pork on small burger buns topped with coleslaw and cabbage if desired.
