Sloppy Joe Sweet Potatoes
4 sweet potatoes (800 g)
250 g ground beef
1 tsp Montreal steak seasoning
1/2 cup carrots, finely chopped
1/2 cup onion, finely chopped
1/2 cup mushrooms, chopped
2 tbsp red pepper, finely chopped
1 garlic clove
1/2 tbsp red wine vinegar
1/2 tbsp Worcestershire sauce
200 g chopped tomatoes
2 tbsp tomato paste
1/3 cup water
Spring onions (for garnish)
Bake the sweet potatoes until they are soft throughout. Cook the ground beef in a pan, then add the onion, garlic, carrots, mushrooms, and pepper. Sauté until the vegetables begin to soften. Add the chopped tomatoes, tomato paste, vinegar, water, and seasonings to the pan, and simmer on low heat for 15-25 minutes.
Slice the baked sweet potatoes lengthwise and top them with the beef mixture. Garnish with sliced spring onions before serving.
