Skonsur
Skonsur are basically just a thick large pancake that can be served warm or cold and used as bread. I personally think they are best topped with butter and cheese.
400 g flour
4 tablespoons sugar
1 tablespoon baking powder
1/2 teaspoon salt
2 eggs
75 g melted butter
4.5 - 5 dl milk
Combine the dry ingredients in a bowl.
Add the eggs and melted butter, along with half of the milk. Add more milk as needed to achieve a thick batter.
Cook on a griddle, flipping when bubbles start to form on the surface of the pancake, and the pancake has taken on a light golden color.
