Sherry Mousse
This recipe is a must-have for Christmas and New Year's.
4 egg yolks
4 tbsp sugar
400 ml double cream
50 ml sherry
15 amaretti cookies
100 g dark chocolate
4 sheets gelatin
Whip the cream until stiff.
Beat the egg yolks and sugar together until well mixed.
Soften the gelatin in cold water.
Heat the sherry and dissolve the gelatin in it.
Cool the mixture, then whisk it into the egg mixture.
Chop the chocolate and crumble the amaretti cookies. Fold them into the whipped cream.
Gently combine the egg-gelatin mixture with the cream. Chill for several hours.
Decorate with grated chocolate, whipped cream, and cherries or strawberries.
