Satay Sauce
2 tbsp PB2 (powdered peanut butter)
1 tbsp water
1 tbsp low-sodium soy sauce
1 tsp brown sugar
1/8 tsp ginger powder
a splash of lime juice (optional)
1 tsp sesame oil
If powdered peanut butter is hard to find, you can substitute it with pure peanut butter; just omit the powder and water instead, and use 3 tbsp of peanut butter instead.
Combine all ingredients in a bowl, adding more water if the sauce is too thick.
This sauce pairs exceptionally well with salads and chicken or serves as a dipping sauce for spring rolls.
