Roast Garlic Pasta Sauce
1 whole head of garlic, roasted with a little oil
1 small onion, chopped
1 tbsp olive oil
1 tsp dried garlic flakes
1 tbsp tomato paste
1/4 tsp salt
1/4 tsp balsamic vinegar
1/4 tsp hot sauce
1/8 tsp red pepper, ground
1 tsp oregano
1/8 tsp basil
2 cans (400 g each) whole plum tomatoes
Start by cutting the top and bottom off the head of garlic and drizzle a little olive oil over it.
Wrap the garlic in aluminium foil and bake in the oven at 200°C for 30 minutes.
Meanwhile, you can chop and heat the onion in oil in a pan until the onion is golden and soft. Add the garlic flakes and sauté for an additional minute.
Then add the tomato paste, salt, balsamic vinegar, hot sauce, red pepper, basil, and Italian seasoning.
Add the tomatoes along with the liquid from the cans, bring to a boil, and let simmer over low heat for 20 minutes.
Squeeze the roasted garlic out of the skin and add it to the sauce. Simmer for an additional 30-45 minutes or until the sauce has the desired flavor.
Serve over good pasta with garlic bread.
