Roast Beef Canapés
600 g beef tenderloin or sirloin
Salt and pepper to taste
For the Canapés:
2-3 baguette loaves
Mild salad leaves
Remoulade
Fried onions
Pickles
It’s best to cook the beef a day in advance to enhance the flavors.
Preheat your oven to 200°C.
Season the beef on all sides with salt and pepper.
Sear the beef on a hot pan until browned on all sides, then transfer it to the oven with a meat thermometer inserted.
Cook until the internal temperature reaches 55°C .
Allow the beef to cool, then refrigerate until you are ready to slice it thinly (using a meat slicer if available).
Assemble the Canapés:
Begin by slicing the baguette into thin slices.
Place a salad leaf on one half of the baguette slice and top it with the roast beef.
Add a dollop of remoulade and fried onions on top of the beef.
Finish by garnishing with a slice of pickles.
