Pulled Pork Tacos with Slaw
Ingredients for the Pork:
750 g pork shoulder or pork rib roast (trimmed)
1 onion
200 ml dark beer (such as Guinness)
2 tbsp brown sugar
1 tbsp soy sauce
3 tsp smoked paprika
1 tsp onion powder
1 tsp garlic powder
1/2 tsp thyme
1/2 tsp salt
1/2 tsp cumin
2 cloves garlic, finely grated
For the Slaw:
1-2 grated carrots
Finely sliced red cabbage
1 grated apple
A bit of mayonnaise and/or sour cream (optional)
Salt and lime juice
Slice the onion and place it at the bottom of the slow cooker. Add the soy sauce.
Trim the pork and rub the brown sugar and spices (smoked paprika, onion powder, garlic powder, thyme, salt, cumin, and grated garlic) onto the meat.
Place the seasoned pork on top of the onions in the slow cooker, and pour the beer over the meat.
Cook for 6 hours on high or 10 hours on low until the meat is tender and easily pulls apart.
Once cooked, remove the pork from the slow cooker and shred it with two forks. Drizzle a bit of the cooking liquid over the pulled pork to keep it moist and flavorful.
Use small soft taco shells or tortillas for serving.
Prepare the slaw:
Combine the grated carrots, red cabbage, and apple in a bowl. Add a touch of mayonnaise or sour cream if desired, then season with salt and lime juice to taste.
Fill the tacos with pulled pork and top with the fresh slaw for a delicious meal
