Pineapple and Ham  Quiche

2 sheets of filo pastry

4 Babybel Light cheeses

180 g cream cheese

2 eggs

4 egg whites

Salt

60 g smoked ham

20 olives

Small pieces of pineapple

30 g grated cheese

Arrange the filo pastry in a large baking dish or two small springform pans.

Place the smoked ham, pineapple, olives, and small pieces of Babybel cheese evenly over the pastry.

In a bowl, whisk together the eggs, cream cheese, and a pinch of salt.

Pour the egg mixture over the layered fillings and sprinkle a little grated cheese on top.

Bake in a preheated oven for 30 minutes or until the egg mixture is set.

This dish is great for lunch boxes and can even be made the night before and eaten straight from the refrigerator.
