Peanutbutter Cookies
2 cups all-purpose flour
1 cup brown sugar
1 egg
1 tsp vanilla extract
1 cup peanut butter (235 g)
1 cup margarine (or butter) (190 g)
1 cup granulated sugar
1 tsp baking soda
1/2 tsp salt
Mix all the ingredients together and knead into a dough.
Roll the dough into balls.
Press each ball down with a sugar-dusted meat mallet (or a fork) to create a pattern on the cookies.
Bake at 200°C until golden. Keep an eye on the baking time to ensure they don't overbake.
