Peanut Vegetable Noodles

Peanut Sauce:

3 tbsp soy sauce

3 tbsp peanut butter

1 chicken stock cube

4-6 tbsp hoisin sauce

A splash of sriracha sauce

1 clove of garlic

Green onions

Carrots

Baby corn

Sugar snap peas or mangetout

Red chili

250 g cooked rice noodles

1 tbsp peanut oil for frying

Cut all the vegetables into thin strips and set aside.

In a bowl, mix together the ingredients for the peanut sauce.

Heat the oil in a pan and stir-fry the vegetables over very high heat.

Pour the sauce over the vegetables and add water if needed.

Finally, add the noodles to the pan and heat for 2 minutes.

Optionally, top with a sprinkle of roasted peanuts before serving.
