Pea and Mint Soup
300-500 g frozen green peas
500 ml vegetable broth
3 stalks spring onions
1 tsp oil
Black pepper
15 fresh mint leaves
Soften the spring onions in oil.
Add the peas and vegetable broth, and simmer for 20 minutes.
Blend the soup along with the mint.
Season with salt and pepper to taste.
