Orange Muffins with Orange Glaze
80 g sugar
2 eggs
1 tsp vanilla extract
150 ml neutral oil
100 ml orange juice
220 g flour
Pinch of salt
1 tsp baking soda
Glaze:
Zest from one orange
6 tbsp powdered sugar
1-2 tbsp fresh orange juice
Preheat your oven to 180°C.
In a mixing bowl, whisk together the eggs and sugar until the mixture is light and fluffy.
Add the vanilla extract, oil, and orange juice to the egg mixture, and stir lightly to combine.
Sift the dry ingredients (flour, salt, and baking soda) into the wet mixture, and gently fold everything together with a spatula until just combined.
Divide the batter evenly among 12 muffin cups.
Bake in the preheated oven for 15-20 minutes or until a toothpick inserted into the center comes out clean.
Allow the muffins to cool completely on a wire rack.
In a small bowl, combine the orange zest, powdered sugar, and fresh orange juice. Mix until smooth.
Drizzle the glaze over the cooled muffins, and if desired, add a dollop of orange jelly for decoration.
