Oatmeal Cookies
240 g soft butter or margarine
100 g sugar
80 g powdered sugar
1 egg
1/2 tsp vanilla extract
140 g flour
1/2 tsp baking soda
1/2 tsp salt
3/4 tsp cinnamon
140 g oatmeal
2-4 tbsp raisins
Preheat the oven to 190°C.
In a mixing bowl, cream together the butter, sugar, and powdered sugar until well combined. Add the egg and vanilla extract, and mix a little further.
In a separate bowl, sift together the flour, baking soda, salt, and cinnamon. Gradually add this mixture to the egg mixture and stir until combined.
Fold in the oatmeal and raisins.
Roll the dough into small balls and place them on a baking tray lined with parchment paper. Gently press down on each ball to flatten it slightly.
Bake for 8-10 minutes at 190°C.
Allow the cookies to cool on the baking tray for a few minutes before transferring them to a wire rack to cool completely.
