Oatcakes

200 g rolled oats

150 g flour (a mix of all-purpose and whole wheat or graham flour)

70 g sugar

3/4 tsp baking powder

1/2 tsp salt

125 g margarine, cold

50 ml milk or almond milk

Knead the dough well and then roll it out. It’s easiest to work with a portion of the dough at a time. Place a small piece of parchment paper over the dough and roll it out with a rolling pin.

Cut out round cookies and use a thin spatula to lift the dough from the countertop onto the baking sheet.

Bake at 180°C for 15 minutes.
