Mini Tortilla Cups
This recipe is very kid-friendly and can be customized with additions like pepper cheese or jalapenos to suit individual taste.
250 g ground beef
Small can of corn
1/4 finely sliced bell pepper
Jar of salsa or Bolognese sauce
1 grated carrot
50 g cheese
4 flour tortillas, cut into quarters
Press each tortilla piece into the cups of a muffin tin. Cook the ground beef with the vegetables and sauce. Soften the vegetables in the sauce, then stir in the corn. Spoon 1-2 heaping tablespoons of the meat mixture into each tortilla cup and sprinkle a little cheese on top.
Bake for 5-10 minutes at 200°C until the cheese melts. Serve with sour cream and extra salsa.
