Minestrone soup
1 tsp oil
2 large carrots, finely diced
2 celery stalks, finely diced
1 onion, finely chopped
2 cloves garlic, finely chopped
1 l water
400 g chopped tomatoes
1 vegetable stock cube
1 chicken stock cube
1/2 tsp thyme
1/2 tsp oregano
1/2 tsp smoked paprika
60 g dry pasta (macaroni)
Heat oil in a large pot. Cook onion, garlic, carrot and celery for 3-5 minutes. Add broth, tomatoes, pasta and spices. Simmer for 10-15 minutes until pasta is ready.
