Meringue Cookies with "Þristur"
4 egg whites
230 g light brown sugar
1 bag of "Þristur" chocolate bars (250 g)
Method:
Whip the egg whites until stiff peaks form.
Gradually add the brown sugar to the egg whites, a little at a time, while continuing to whip until the mixture is glossy and well-combined.
Chop the "Þristur" chocolate bars into small pieces and gently fold them into the meringue mixture using a spatula.
Drop the mixture onto a baking sheet lined with parchment paper, forming small mounds with a tablespoon.
Bake at 125°C for 40 minutes.
