Loaf Cake
200 g sugar
150 g margarine
2 eggs
360 g flour
2 tsp baking powder
1 1/2 dl milk or almond milk
50 g raisins
1/2 tsp lemon extract
1/2 tsp cardamom extract
Cream together the margarine and sugar, then add the eggs.
Gently mix in the dry ingredients along with the milk and extracts.
Bake at 180°C for 55-60 minutes.
If the cake starts to get too dark, you can cover it with aluminum foil to prevent the top from burning.
Make sure to poke the cake with a skewer or toothpick (it should come out clean) to ensure it’s fully baked.
