Lemon Cake
230 g flour
230 g sugar
1 tsp baking soda
1/2 tsp salt
Zest of 1 lemon
1 tsp vinegar
1 tsp vanilla extract
1 tsp lemon extract
75 ml vegetable oil
240 ml water
Preheat the oven to 175°C.
In a bowl, mix together the flour, sugar, baking soda, salt, and lemon zest.
In a separate bowl, combine the vinegar, vanilla extract, lemon extract, vegetable oil, and water.
Gradually pour the wet ingredients into the dry mixture, stirring until well combined.
Pour the batter into a greased cake pan and bake for 35 minutes, or until a toothpick inserted in the center comes out clean.
Let the cake cool before adding frosting.
Vanilla Frosting:
50 g margarine
250 g powdered sugar
1 tsp vanilla extract
A little water if needed to adjust consistency
Whip the margarine and powdered sugar together. Add vanilla extract and a little water if needed to reach the desired texture. Spread the frosting over the cooled cake.
