Kumara Pie
400 g sweet potatoes, peeled and diced
1/2 cup milk
6 large eggs
Salt and pepper, to taste
4 slices bacon or smoked ham, chopped
1 tbsp dried parsley
120 g shredded cheese
2-3 tomatoes, sliced
Preheat your oven to 200°C.
In a skillet, cook the bacon until crispy. Remove from the skillet, let it cool, and then chop into small pieces.
In a pot, boil the diced sweet potatoes in lightly salted water for about 5 minutes, or until they start to soften. Drain and set aside.
In a large bowl, whisk together the eggs and milk. Add the cooked sweet potatoes, chopped bacon, dried parsley, and shredded cheese. Season with salt and pepper to taste.
Pour the mixture into a baking dish lined with parchment paper (this will make it easier to remove later). Arrange the tomato slices on top of the mixture.
Bake in the preheated oven for about 35 minutes, or until the eggs are set and no longer runny.
Let cool slightly before slicing. This dish can be enjoyed warm or cold, making it perfect for the picnic basket.
