Kransakaka bites
300 g marzipan (Bleikt Odense)
150 g sugar
2 eggs
Start by breaking the marzipan into pieces and placing it in the mixing bowl along with the sugar.
Mix together using the K attachment and then add the egg whites to the bowl.
Mix well and then chill the dough in the refrigerator for about an hour before baking.
I use a cookie press to achieve a nice pattern and uniform size for each batch, but you can also put the dough in a piping bag; just be aware that you may need to increase the baking time slightly.
Pipe the dough into small cookies on a baking sheet lined with parchment paper and bake at 200°C for 10-12 minutes.
Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a cooling rack.
These can be made a few days before the party and frozen.
From this recipe, I got about 60 cookies.
