Hot dog pasta
8 hot dogs, sliced
1 onion, chopped
1 tin chopped tomatoes
300 g carrots, diced
4 cloves garlic, minced
Oregano, chili powder, curry powder and salt to taste
1/2 can sour cream
150 g whole wheat penne pasta
A little oil for frying
1-3 dl water (as needed)
In a large pan, heat a little oil over medium heat and add 2 tbsp of curry powder. Stir for a minute until fragrant.
Add the chopped onion to the pan and sauté until it becomes soft.
Add the minced garlic, sliced hot dogs, diced carrots and the tin of chopped tomatoes to the pan.
Allow the mixture to simmer until the carrots are tender, adding water as necessary to keep the mixture from drying out.
Season well with oregano, a little salt, and chili to taste.
Just before serving, stir in sour cream to combine.
Meanwhile, cook the whole wheat penne pasta according to package instructions. Drain and mix in with the hot dog .
