Healthy Blueberry Muffins

50 g margarine

80 g powdered sugar

65 g applesauce

1/2 tsp vanilla extract

1/8 tsp lemon extract

1 egg

1/4 tsp salt

1 tsp baking powder

1/4 tsp baking soda

30 g rolled oats

150 g flour

100 ml milk

100 g blueberries

Whip together the margarine and powdered sugar.

Add the egg and extracts, and continue to mix slightly.

Incorporate the remaining ingredients into the batter and stir to combine.

Gently fold in the blueberries.

Pour the mixture into paper-lined muffin molds. It’s nice to sprinkle a little coarse granulated sugar on top of each muffin.

Bake at 175°C for 20-25 minutes.
