Gremolata Potatoes

Gremolata Potatoes

1 kg potatoes, boiled and cut into wedges after cooking

1 tbsp olive oil

4 tbsp lemon juice

2 cloves garlic, pressed

1 1/2 tbsp lemon zest

35 g breadcrumbs

a handful of chopped fresh parsley

Place the potatoes in a baking dish and sprinkle the olive oil and breadcrumbs over them.

In a bowl, mix the garlic, lemon zest, lemon juice, and parsley, and set aside until after the potatoes are baked.

Bake the potatoes in the oven at 200°C until they are golden (15-20 minutes).

Remove from the oven and spread the gremolata mixture over the potatoes.
