Golden Syrup Cookies
100 g soft butter
100 g sugar
160 g flour
2 tbsp golden syrup
1 tsp baking soda
1 tsp vanilla extract
1 tsp ginger
Mix everything together, knead, and divide the dough in half.
Roll each piece of dough into logs that fit on a baking tray.
Place the logs on baking paper and gently press down on them to flatten slightly so they resemble flat baguette bread.
Bake at 175°C for 10 minutes or until the edges start to take on a slight color.
Allow the logs to cool on the baking tray for 1-2 minutes before cutting them into suitable pieces.
Store in an airtight container.
