Garam masala spice mix
2 Tbsp coriander seeds
1 1/2 msk cumin seeds
1 tsk whole cloves
1 tsk black peppercorns
1 tsk cardimom seeds
1 tsk fennel seeds
1 tsk cinnamon
1 tsk mace or all spice
Start by dry roasting all spices except cinnamon and mace.
Let the spices cool before grinding with pestle and mortar.
Mix in cinnamon and mace and store in an airtight container.
