French Chocolate Cake With Ganache
4 eggs
2 dl sugar (170 g)
1 dl flour (60 g)
200 g Dark chocolate
200 g butter
Melt the chocolate and butter together over a double boiler. Allow the mixture to cool slightly while you work with the other ingredients.
Grease a 26 cm springform pan with butter and dust with flour. You can also cut out a circle of baking paper and place it at the bottom to make it easier to remove the cake from the pan. Preheat the oven to 180°C.
Whisk the eggs and sugar together for 2-3 minutes until the mixture becomes light and fluffy. Sift the flour into the bowl and pour in the chocolate mixture. Gently fold together with a spatula to avoid deflating the batter.
Bake at 180°C in the center of the oven for 35-40 minutes.
Chocolate glaze:
100 g dark chocolate
50 g butter
1 tbsp syrup
Heat together in a pot, stirring constantly, but be careful not to let the mixture boil.
Pour the chocolate glaze over the cake once it has cooled.
