Fish in Crisps
4 fillets of white fish
3-4 tablespoons mayonnaise
1 tablespoon Dijon mustard
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
150 g potato chips (e.g., salt and vinegar flavor)
1 teaspoon thyme
In a bowl, mix together the mayonnaise, Dijon mustard, onion powder, and garlic powder. Brush this mixture over the fish fillets.
In another bowl, crush the potato chips and mix in the thyme.
Coat the fish fillets with the crushed potato chip mixture and place them on a baking sheet lined with parchment paper.
Lightly spray some oil or Pam spray over the fish.
Bake in a preheated oven at 200°C for 15-20 minutes, or until the fish is golden and cooked through.
Sauce:
50 g mayonnaise or sour cream
Pickles
Capers
Instructions for Sauce:
Finely chop the pickles and capers, then mix them into the mayonnaise or sour cream.
Serve with a side salad, chips and the sauce.
