Easy Rhubarb Crumble

500 g rhubarb, sliced into 0.5 cm pieces

2 tbsp cinnamon sugar

Topping:

200 g flour

85 g sugar

35 g coconut flour

150 g butter or margarine

Combine the dry ingredients with the margarine until you achieve a coarse crumble.

Place the rhubarb in the bottom of a baking dish and sprinkle the cinnamon sugar over it.

Spread the flour mixture on top and bake at 180°C for 25-30 minutes or until the bake is golden brown.
