Carb Cakes
200 g cooked crab meat, shredded
1 egg
1 egg white
16 Ritz crackers, crushed
1 tablespoon light mayonnaise
1/4 red bell pepper, finely chopped
2 green onions, finely sliced
Salt and pepper to taste
In a bowl, beat the egg and then mix in the mayonnaise, green onions, and red bell pepper.
Gently fold in the crab meat, being careful not to overmix. The crab should remain in chunky pieces in the mixture.
Refrigerate the mixture for about half an hour to firm it up before shaping.
Form the mixture into 4 patties.
Place the patties on a baking sheet lined with parchment paper. Bake at 200°C for 10 minutes.
Flip the patties over and bake for an additional 10 minutes until golden.
Serve with avocado and, if desired, a light grilling sauce or chili mayonnaise.
