Courgette Bake
300 g grated zucchini, water squeezed out
3 shallots, finely chopped
½ bunch chives, finely chopped
50 g mozzarella, chopped
75 g flour
1 tsp baking powder
180 ml buttermilk
2 eggs
1 tsp olive oil
Salt and pepper
1-2 tbsp grated parmesan
Preheat your oven to 190°C.
Grate the zucchini and squeeze out as much liquid as possible. You can use a clean kitchen towel to wring out the liquid or simply squeeze it by hand.
In a bowl, combine the drained zucchini with the chopped shallots, chives and mozzarella.
In another bowl, mix together the flour, baking powder, buttermilk, eggs, olive oil, salt, and pepper. Then, combine this mixture with the zucchini mixture.
Grease a baking dish or pie dish with oil (I use Pam spray).
Pour the mixture into the prepared dish and sprinkle fresh grated parmesan on top. Bake in the preheated oven for 30 minutes.
